Archaeology of mills and millstone quarries in Burgundy-Franche-Comté by Luc Jaccottey: lithic archaeologist, specialist in milling equipment, National Institute for Preventive Archaeological Research (Inrap).
Grain mills have existed since the beginnings of agriculture in the Neolithic period. At first, they were reciprocating, but from the Gallic period onwards they became rotary. Then, during Antiquity, hydraulic mills appeared, with a greater capacity, which have lasted until today. Recent excavations have made it possible to find several of these hydraulic and medieval mills and to understand their mechanisms and developments. At the same time, several quarries linked to the production of millstones have been studied. They show how the evolution of millstones and mills required adaptations in the exploitation techniques of these quarries.
