Gaudes

The “Gaudes” ... what is it?
It is a roasted corn flour cooked in water, these are eaten hot, salty or sweet with milk, or in the form of biscuits. This cheap dish was consumed in the Bresse farms.
Nowadays, the “Gaudes” are still consumed but often in the form of shortbread cookies. They are also used for cooking and frying frogs’ legs, they make them more crispy.
